Prawn crackers, also known as Keropok or krupuk, are a classic Chinese appetizer that is as popular and widely consumed as potato chips. This crispy snack is ideal for serving as an appetizer during celebrations like Chinese New Year or simply enjoying at any time. Here’s how to make it at home.
Ingredients:
– 150 g peeled prawns
– 130 g tapioca starch
– 5 g salt
– Freshly ground black pepper to taste
– Sunflower oil for frying

Instructions:
- Grind the prawns in a food processor until you get a smooth paste.
- In a bowl, mix the prawn paste with the salt, pepper, and tapioca starch. Work the mixture until it is well combined and smooth.
- Place the mixture in a steaming tray and steam for about 30-40 minutes, or until fully cooked. Allow the mixture to cool once cooked.
- Wrap the cooled mixture in plastic wrap and refrigerate for at least 1 hour to harden.
- Remove the mixture from the refrigerator and slice it thinly.
- Dehydrate the slices in the oven at a low temperature (around 60-70°C) for 2-3 hours, or until completely dry and crispy.
- Heat sunflower oil in a pan or deep fryer to about 180°C.
- Fry the dehydrated slices in small batches until they puff up and become golden and crispy. Drain on paper towels to remove excess oil.
- Serve the prawn crackers as an appetizer or snack. Perfect to enjoy with a dip or on its own!
