Kuri Kinton is a traditional Japanese dish commonly served during Osechi Ryori, the New Year’s meal. It represents good fortune and prosperity, as its golden color symbolizes wealth. This sweet dish combines the smoothness of sweet potatoes with the sweet and creamy touch of canned chestnuts.

Ingredients:
- 450 g (1 lb) sweet potatoes (peeled and cut into 2.5 cm (1 inch) slices)
- 1 jar of canned chestnuts (8-12 chestnuts)
- 1/4 cup of the chestnut syrup
- 1 1/2 cups sugar
- 1 tablespoon mirin (sweet rice wine)

Instructions:
- Soak the sweet potato slices in water for 15 minutes, then drain.
- In a deep pot with water, bring the sweet potatoes to a boil. Reduce the heat to medium and simmer until tender. Drain the sweet potatoes.

- Mash and sift the sweet potatoes. Add 3/4 cup of sugar and mix well. Incorporate the remaining sugar, mirin, and 1/4 cup of chestnut syrup. Simmer, stirring until the mixture is ready.
- Finally, add the chestnuts and continue to simmer for a few more minutes. Enjoy!
