World Recipe: Jamaican Rice

Jamaican Rice is a dish that blends Caribbean influences with bold fruity flavours. Although its name refers to the island, this version is a popular adaptation that mixes sweet aromas, spices, and soft alcoholic notes, creating an exotic and balanced dish. It’s ideal for festive meals or as a unique side dish full of character.

Ingredients

  • 6 tart apples
  • 100 g raisins
  • 1/2 cup rum
  • 2 tablespoons lemon juice
  • Butter
  • 6 cloves
  • 1/4 kg marzipan
  • 1 jar natural cassis
  • Sugar
  • Cinnamon

Preparation

  • Wash the rice and boil it in plenty of salted water until tender.
  • Drain well and set aside. Separately, chop the pineapple slices — if using the Caribbean variant — and warm them in a pan with a bit of butter until lightly browned.
  • Mix these slices with the hot rice.
  • In another pan, sauté the peas in butter and add them to the main mixture.
  • You may include the rum-soaked raisins for extra sweetness and aroma, or add apples and cloves if you prefer a more spiced version.
  • Adjust sweetness with sugar and a touch of cinnamon.
  • To freeze: Place the mixture in an airtight container and put it in the freezer.
  • To defrost: Allow it to reach room temperature and reheat in a low oven until hot and fluffy.
