Kokoda is a traditional Fijian ceviche known for its use of coconut milk and a milder flavor. It’s served cold as a starter and reflects the oceanic bounty of the South Pacific.

Ingredients
- 300 g of white fish (like mahi-mahi)
- Juice of 4 limes
- 1/2 cup of coconut milk
- 1 tomato
- 1 red onion
- Chili, salt, and cilantro

Preparation
- Cut the fish into cubes and marinate in lime juice for 30 minutes until “cooked.”
- Drain slightly and mix with coconut milk, chopped tomato, sliced red onion, chili to taste, and fresh cilantro.
- Serve chilled, in a bowl or on lettuce leaves.
